This high-quality, environmentally friendly white honey comes from the mountains of At-Bashy, in Kyrgyzstan’s Naryn region, which has been known for its mountain honey since ancient times. This soft-textured honey is delicately sweet and rich in vitamins, minerals and enzymes. It is revered by locals for its healing properties, being a natural antibacterial and containing antioxidants. It is even said to be allergen-free.
Producers
The white honey is produced by "Dordoi Dary" LLC, a small, family-run business that is revolutionizing beekeeping in Kyrgyzstan, where beekeeping is usually done by men. Involved in traditional medicine, the company is run exclusively by women and employs ten women to process the honey product. This honey is certified organic according to a Participatory Guarantee System following Bio-KG's private organic standard.
Processing
This honey product is all-natural and environmentally friendly; no fertilizers were used in its creation. After collecting the honeycomb, the product goes through a honey extractor, heated to only 40 °C, and is then filtered and poured into special glass dishes. The honey takes on its white colour as crystallization occurs. It is left untreated and never pasteurized, and therefore maintains its natural enzymes, amino acids, vitamins and nutrients, and is easy to digest.
Territory
This honey comes from the highlands of the At-Bashy village in the Naryn region of Kyrgyzstan, at an altitude of 2 000 metres. The region is home to the valleys and slopes of the inner Tien Shan mountains, which are characterized by their harsh, unique climate. Being far from urban areas, the air and water here are clean. Wild herbs including sainfoin, also known as “holy hay”, grow freely. In Kyrgyzstan, it is widely believed that honey made by bees that feast on sainfoin is of the highest quality.
